Ingredients
  

For the Pizza Dough

  • 1 Batch of Wolfgang Puck's honey crust dough (or your favorite pizza dough)

For the Crème Fraîche Pizza Base:

  • 1 cup crème fraîche
  • 1 cup fresh grated mozzarella cheese
  • 1/2 cup fresh grated parmesan cheese
  • 1 teaspoon ground black pepper

For Toppings:

  • 1 medium onion caramelized
  • 5 slices of prosciutto ham
  • 6 fresh figs sliced
  • 6-7 fresh sage leaves

Instructions
 

Prepare the Pizza Dough:

  • Follow the instructions for preparing your pizza dough. If using Wolfgang Puck's honey crust dough or any pre-made dough, follow the package instructions for proofing and shaping.

Preheat the Oven:

  • Preheat your oven to the highest temperature it can reach (usually around 500°F/260°C). If you have a pizza stone, place it in the oven while preheating.

Prepare the Crème Fraîche Base:

  • In a bowl, combine the crème fraîche, grated mozzarella, grated parmesan, and ground black pepper. Mix until well combined. Set aside.

Roll Out the Dough:

  • On a floured surface, roll out the pizza dough into your desired shape and thickness. If using a pizza stone, transfer the dough onto a piece of parchment paper for easy transfer to the hot stone.

Assemble the Pizza:

  • Spread the crème fraîche mixture evenly over the rolled-out pizza dough, leaving a small border around the edges for the crust.
  • Scatter the caramelized onions over the crème fraîche base.
  • Arrange the sliced figs, prosciutto ham, and fresh sage leaves evenly on top of the crème fraîche mixture.
  • Sprinkle a little more grated parmesan cheese over the toppings.

Bake the Pizza:

  • Carefully transfer the parchment paper with the assembled pizza onto the preheated pizza stone or directly onto a baking sheet if you don't have a stone.
  • Bake in the preheated oven for about 10-15 minutes or until the crust is golden brown, and the toppings are bubbly and slightly browned.

  • Once the pizza is done, remove it from the oven and let it cool slightly.
